    I don't either. Are you saying that when the temperature is 65 degrees, you get inexplicably angry? Like, you're just sitting there, and all of a sudden you feel a wave of rage overtake you, and when you have gathered your wits enough to check either the indoor thermostat or the outdoor temperature, you notice that it's 65 degrees inside or outside, respectively, and thus you make the connection that 65 degrees = rage for Dr. Pepper?

    Interesting.

    Is it because at 65 degrees, you feel neither hot nor cold, and you are used to feeling temperature stimulus, so the lack of stimulation freaks you out? (I am the same way regarding dead silence. It unnerves me.)

    i didn't think it was all that incoherent. i'm used to your grammatical idiosyncracies. it was just vague. i don't know what ticks you off at 65 degree because i don't know anything about you except the few things pieced together from random posts. it makes me wonder why you don't give out more information. are you afraid to?

    as far as i know, there's only one other guy in my apartment complex who takes the city bus. every so often, we'll be waiting at the bus stop at the same time. he's in his twenties, a bit nerdy. every time i see him, he tells everything that goes on in his life - the plumbing problems in his apartment; the time his mother broke her leg; the latest happenings on "lost"; etc.

    i hadn't seen him in several months. but he was at the stop yesterday. he told me he had contracted hepatitis from a dirty tattoo needle. he has been pretty sick for the past 3 months. he talked about dealing with doctors, the interferon treatment he was on, trying to go counciling but leaving because they were christian. he said he had no one else to tell this to.

    then the bus came. he wasn't able to sit near me for the trip to the downtown bus station. i had to catch the seven when we got there, and we parted ways.

    i don't even know this guy's name. i'm sure he told me when we first met, but i don't remember.

    i just found out that i am insanely allergic to dust mites and very likely have a gluten intolerance (i already knew these things, actually, just amusing to have a dr agree.)

    "this would never work in the same room" seemed to me an enigmatic statement, that's all. Obsfuctation appears rampant these days, especially with the doc, but you know, I wasn't part of the conversation. Sorry for butting in like that. I went for a long time not responding to doc, but find him/her/it rather entertaining to a degree.

    Speaking of dust mites, bummer. I made some whole wheat bread yesterday but mistakenly put 5 1/2 tablespoons of gluten in it when the recipe called for 5 1/2 teaspoons. Seems the bread did not rise at all, but the salty crusty parts were good tasting. My guess is that not enough gluten it doesn't rise, and too much gluten, well, same results.

    Recipe 1 3/4 cups 80 degree water
    2 tbs honey
    1 1/2 tsp salt
    4 cups whole wheat flour
    5 1/2 tsp gluten
    1 tsp caraway ground
    2 1/2 tsp yeast.

    Any idea what went wrong other than the gluten?

    also, dissolving the yeast in warm water is a must, but otherwise i think using room temperature water would be better.

    thanks sarah. i use the gluten to aid in the rise. like heather, I am likely sensitive to gluten but continue to use it. when not adding it to the mix, 3 of 4 bread doughs have failed. I have tried using only brand newly purchases flours and other ingredients, organic grinds and herbs, and usually i am batting 50% in getting a loaf to rise. I have used two different bread machines, and currently have a new Cuisinart which I have yet to bake a decent shaped loaf. Closest I've come is with a frighteningly weird whole wheat rye raisin cardamon pumpernickel loaf that uses coffee expresso and cocoa. That one rose well shaped. I think I had better luck before the machine age.

    people who are gluten intolerant might avoid making bread.

    gluten is in *everything*
    all the tasty grains- every bread and cookie, soy sauce, miso, caramel color, maltodextrin, modified food starch, many berry flavorings (especially raspberry), bulghur, kamut, malt/malt vinegar, beer, any distilled spirit that's put back in the original barrel after the fermentation for flavoring (generally the stronger flavored alcohols), SOUR CREAMwtf, seitan, spelt, some teas, wheat grass (though buckwheat is okay as long as it's not mixed with anything), textured vegetable protein, "artificial colorings," and smoke flavoring.

    really in bulghur and sour cream? There is a setting for making gluten free bread on the Cusinart and i do have a recipe, but it tastes like salty cardboard.

    I know I can't do small seeds, b/c of diverticulae, like strawberries. I have often thought that the response I have from eating these foods mentioned above might be evidence of gluten intolerance.

    I used to be able to eat green peppers raw, then could only eat them cooked, now cannot eat them at all. My ex wife could not eat broccoli after first born child. I love hot and spicy but the tummy no longer does. And the acid reflux only occurs when eating close to bedtime...which is every night after leaving work at 9pm.

    I had no idea that gluten was in distilled spirits. And I love miso, soy, and on an unrelated foodie note, caramel ice cream.

    I am making my own bread (even if mostly inedible and unleavened) to avoid the additives in commercially prepared breads. 'sides, it smells the place up real nice.

    my uncle's 3rd or 4th wife had sprue, which is some kind of gluten intolerance disease. i know this because she never shut up about it. but only because her only topic of conversation was herself and i only saw her at family dinners; every time she passed up a dinner roll or some pasta we had to hear the story of her life with sprue.

    but she's in her upper 80s now and robustly healthy (my uncle's long dead). a lot of the foods you can't eat when you have gluten intolerance are stuff they tell you to stop eating anyway - bread, cookies, booze. makes you wonder if leading the gluten-free life didn't help extend her life-span.

    danielssss - any of the alcoholics in your family - or you yourself - ever put raw egg in beer? as in cracked a whole egg into a glass, maybe sprinkled some salt on it, then filled it with beer.

    the problem is that you're using a bread machine.

    do it by hand, it'll rise. i've never had a bread recipe of any kind involving yeast that didn't rise.

    start first with a simple chala.

    Ok will try. I want to use the machine because I am doing other things, but i know that's un-green or at least not patriotic or something. It's a brand new machine dammit.

    Yes, raw egg in beer certainly was the family favorite with the men. grandfather Lloyd in particular this was his bar drink. Didn't drink it at home but only egg n beer at bar. American Hotel at the railroad tracks...he used to deliver eggs there and then stay for the rest of the day.

    I never liked the mixture myself, and was mostly a bourbon or vodka drinker though I certainly put away my share of beer. In the end, I was really hooked on expensive vodka or high alcohol rum straight up n warm. Could do egg in that either.

    Yes, I think better lifestyle might give us a longer life. Perhaps my 401-K/IRA will return if I live long enough.

    Nah, you can still have gluten-free cookies. My best friend's youngest sister has a gluten allergy, and her family has been making gluten-free cookies, cakes, and sweets for her since she was a toddler. You just have to find the right blend of flour substitutes to get the texture right.

    I have used rice flour for cookies at times. I believe the brand i used (Red Mill) was gluten free. But i would have to stop eating 95% of what I ingest to be gluten free.

    I wonder what is up with the bread machine. yes I do like making it the old fashioned non machine get your hands all sticky way... but the machine is so easy it is crazy not to make your own bread.


    I thinking may be the yeast needs viagra or cialis.
    My first machine I used for years and 50% of the time it turned out weird shaped contortions that tasted decent, then stopped being kind to mis shapen dough and wouldn't rise. I tried everything: replacing the flours used, replacing the yeast, trying different brands of yeast, accurately measuring the water temp, separating the yeast from the water, adding it together, being exact about all measurements, being silly and free with a pinch of that or this. Finally, when my wonderful helpmate took pity on my breadmaking, she got me a new cusinart and promised to toss the old one out even though I had just puchased a new pan and paddle thinking that it was not kneading the dough correctly.

    Actually, I gave my old machine to my ex. My ex now is claiming to make wonderful well shaped tasty loaves from the old machine. And my new machine is cranky just like the old one. Could it be the feng shui of the kitchen, like, I shouldn't be baking bread on that part of the counter??? The location of the bread machine is the only thing I have not changed or tinkered with.

    I know I'm lazy for bread, but I'm tired of paying 4 bucks a loaf for good organic pesticide free baked with love crusties. Perhaps it is the notion that I gave the old machine away (I get angry about small appliance landfill) and to whom I gave it. Perhaps the universe is getting me back for not putting egg in my beer.

    I am thinking that the yeast may be needs viagra or cialis??
