    scrub, pierce and bake new potatoes (1-2 per person)
    while the potatoes are baking, peel and slice one carrot into thin rounds.
    core, seed and slice two bell peppers.
    peel and slice one kob of ginger.
    warm some peanut oil in a non-stick frying pan.
    toss in the carrot and bell pepper.
    slice the potatoes, and add to the fry.
    add salt and fresh ground pepper to taste.
    add the ginger.
    pour on a little more peanut oil and fry for two minutes.

    serve with ketchup or salsa.

    yummy!
