If you like bombastic choir/orchestra music, try Verdi's Requiem. Although my favorite from that is hardly bombastic -- the Agnus Dei.

Oh, and if you're feeling a bit more devilish, check out Jerry Goldsmith's score to the Omen. Plenty of good choir/orchestra stuff going on there.

Carmina Burana is kewl. During my freshman year in college the concert band I was in did a few movements of it, both singing and playing. It was a trip standing up in the middle of a piece and belting out a few verses in latin. I still remember the first verse to "O Fortuna."
